Boost Mac Salad
Is this a salad that thinks it's a burger, or a burger that thinks it's a salad? Either way, it's delicious.
This recipe takes the classic, crave-worthy burger experience and makes it healthy and versatile. Swap out the beef for juicy chicken, turkey, lamb, nitrate-free bacon, or even prawns. Craving a plant-based option? Try tempeh or a medley of your favourite chopped vegetables.
The star of this meal is the sauce, which has an uncanny resemblance to a certain iconic burger sauce (but this version is healthy).
Meal prep: Keep all your ingredients separate for ultimate freshness, then assemble just before serving. The cooked meat mixture can be frozen for up to three months.
Ingredients
- 8 Tbsp unsweetened coconut yoghurt
- 3 tsp onion powder
- 3 tsp Dijon mustard
- 2 Tbsp quick cucumber pickles, very finely chopped
- 4 tsp pickle liquid
- ¼ tsp each of mineral or Himalayan salt and freshly ground black pepper
- ¼ tsp smoked paprika powder
- 2 tsp finely chopped parsley, optional
- 1 Tbsp dehydrated onion flakes, optional
- 4 Tbsp gluten-free tamari sauce
- 500g lean beef mince
- 2 Tbsp onion powder
- Mineral or Himalayan salt and freshly ground black pepper
- 4 Tbsp sesame seeds, lightly toasted
- 1 medium red onion, thinly sliced and fried in 2 Tbsp tamari sauce until golden
- 5 handfuls chopped iceberg, bib or baby cos lettuce
- 20 slices sugar-free pickled cucumber
- 2 ½ Tbsp sugar-free pickled onions
- 5 large eggs, poached, fried or boiled
- 5 tsp lightly toasted sesame seeds
- 2 ½ Tbsp nutritional yeast
Instructions

Make the Biggie Mac sauce first, by mixing together the first 10 ingredients. Season to taste with salt and pepper. Cover and store in the fridge (for up to two weeks).

Heat a frying pan or wok on medium to high temperature with the sticky sauce and stir fry the ground beef mince with the onion powder. Break it up with a wooden spoon and cook until any liquid evaporates. Season well with salt and pepper and stir through the sesame seeds.

For meal prep, evenly portion the remaining salad ingredients except the sauce into five containers. Keep the meat separate to heat each day, and only add the sauce when ready to eat.

For a sharing salad, toss all the salad ingredients together and drizzle with some of the Biggie Mac sauce. Top with the warm meat and add more sauce before serving.
