Hoisin Beef with Broccoli Sesame Rice

Beef mince is a crowd-pleasing, economical protein and it becomes a very tasty and quick weeknight meal here.
As an alternative to regular white rice, this recipe adds lightly blanched broccoli that’s been diced and tossed into the cooked rice along with sesame oil and toasted sesame seeds. It’s an easy but super delicious upgrade.
Ingredients
- 2 spring onions
- 4 garlic cloves
- 1 Tbsp finely grated ginger
- 800g beef mince
- 2 Tbsp hoisin sauce
- 2 Tbsp oyster sauce
- 1 Tbsp soy sauce
- 1 tsp sesame oil (for the beef)
- ½ head broccoli
- 1 ½ cups jasmine rice
- ½ teaspoon salt
- 1 Tbsp toasted sesame seeds
- 2 tsp sesame oil (for the rice)
- Oil for sauteing
Instructions
- Thinly slice all parts of the spring onions, discarding the root. The white parts will be sauteed and the green parts added at the end.
- Heat a glug of oil in a pan over a high heat. Add the garlic, ginger and white part of the spring onions.
- Cook for a minute before adding the beef mince. Brown the mince really well over the course of 5 minutes, breaking up any large chunks.
- Add the hoisin sauce, oyster sauce and soy sauce. Cook, stirring frequently for another 4 minutes. Remove from the heat and add the sesame oil and the green parts of the spring onions. Stir through well.
- Cut the broccoli into small florets and place in the large bowl. Cover with boiling water and leave for 3 minutes. Drain well in a colander and then dice. Set aside until rice is cooked.
- While the meat is cooking, place the jasmine rice in a pot along with 3 cups of water and ½ teaspoon of salt. Bring to a boil, before reducing to a low heat and cooking, with a lid just slightly ajar, for 12-15 minutes until the rice is tender and the liquid is absorbed.
- Add the diced broccoli, sesame oil and toasted sesame seeds to the rice and use a fork to fluff the rice and mix it all through.
- Serve the beef with the sesame rice. Garnish with toasted sesame seeds.
